Creole chicken wings with peach mustard sauce

Ingredients:
3 lbsChicken Wings
4 Cloves Garlic, Minced
2 tspDry Mustard
2 tspPaprika
1 tspDried Thyme
1 tspGranulated Sugar
1 tspCayenne Pepper
1/2 tspSalt
1/2 tspBlack Pepper
1/4 cupLemon Juice
PEACH MUSTARD SAUCE
1/2 cupPeach Jam
1 tbspDijon Mustard
2 tspPimiento, diced
1 tspCider Vinegar
Procedures:
1Cut tips off wings; reserve for stock.
2In small bowl, stir together garlic, mustard, paprika, thyme, sugar, cayenne, salt and black pepper; blend in lemon juice to make paste.
3Using pastry brush, brush paste over wings.
4Arrange wings, meaty side down, on lightly greased foil-lined baking sheets.
5Let stand for 30 minutes at room temperature.
6Bake in 475f oven for 15 minutes; turn wings over and bake for 15 to 20 minutes or until brown, crisp and no longer pink inside.
7Peach mustard sauce: in saucepan, melt jam over low heat; stir in mustard, pimiento and vinegar.
8Serve separately for dipping.
