Mix sugar and salts together.

Cover fish with this mixture and wrap in plastic wrap.

Place in a plastic bag; tie; and put in dish in the refrigerator, meat side up, for two days.

Turn the whole bag over and keep in the refrigerator for four more days.

Wash off brine.

Slice diagonally.
