Ingredients:
2 cupRotini
1 cupPlum tomatoes, chopped &
-- seeded
6 ea Green onions, thinly sliced
1/2 cupRed bell pepper, chopped
1/4 cupCilantro, chopped
15 ozPeas, cooked
15 ozBlackeyed peas, cooked
11 ozCorn, cooked
2 ozOlives, sliced
DRESSING
1/2 cupSalsa
1/4 cupOil & vinegar dressing
1 tbspLime juice
1 tspSugar
GARNISH
8 Lettuce leaves
Cilantro
Procedures:
1Cook pasta till *al dente*.
2Drain & rinse with cold water.
3In large bowl, combine cooked pasta and all remaining salad ingredients; toss lightly.
4In small bowl, combine all dressing ingredients & mix well.
5Pour over salad & toss lightly to coat.
6Cover & refrigerate 1 hour.
7To serve, line serving platter or bowl with lettuce leaves.
8Spoon salad over lettuce leaves; top with cilantro.
