Ingredients:
2 lbsBroiler-fryer chicken, to
3 lbsBroiler-fryer chicken
-cut into serving pieces
2 cupWater
6 Whole peppercorns
2 Bay leaves
2 tspSalt
3 Ripe tomatoes, peeled and
-cut into 8 wedges each
1 medOnion, thinly sliced
10 ozFrozen lima beans, thawed
10 ozWhole kernel corn, thawed
10 ozFrozen okra, thawed and
-sliced into ?inch pieces
Procedures:
1Wash chicken and pat dry.
2Place chicken, water, peppercorns, bay leaves and salt in a deep, 3-quart, heat-resistant, non-metallic casserole.
3Stir to combine.
4Heat, covered, in microwave oven 10 minutes.
5Stir contents.
6Heat, covered, in microwave oven an additional 5 minutes.
7If desired, remove chicken from bone and cut into 1-inch pieces.
8Discard bay leaves and peppercorns.
9Return chicken to broth and add remaining ingredients.
10Heat, covered, in microwave oven 10 minutes.
11Uncover and heat an additional 5 minutes or until chicken and vegetables are tender.
12Serve in soup bowls
