Ingredients:
| 6
| tbsp | Olive oil | | 3
| large | Green bell peppers, halved | | 6
| large | Tomatoes | | | 1 ea Garlic clove, finely chopped | | 1/2
| tsp | Cumin | | 1/8
| tsp | Hot red pepper | | | Salt & pepper | | | Juice of ?lemon |

Procedures:
| 1 | Heat olive oil in a large skillet. | | 2 | Saute the halved peppers until soft & just beginning to change colour. | | 3 | Halve the tomatoes & gently squeeze out the seeds & juices. | | 4 | Place cut side up in the skillet & continue to cook, shaking the skillet from time to time. | | 5 | Turn the peppers occasionally. | | 6 | Cook until the tomatoes are cooked through. | | 7 | Transfer peppers & tomatoes to a serving dish. | | 8 | Pour off half the olive oil & return skllet to the heat. | | 9 | Add garlic & saute at a high heat for 1 minute. | | 10 | Remove from heat & season with remaining ingredients. | | 11 | Spoon this sauce over the vegetables. | | 12 | Serve warm or cold |
