Ingredients:
3 eachEggs, separated
2 tbspOil
1/2 tspSalt
1 quartClams, shucked & well draine
1 cupMilk
2 cupFlour
2 tbspLemon juice
1 xOil for frying
Procedures:
1In a large bowl, beat egg yolks until thick.
2Beat in milk, 2 t. flour, salt, and lemon juice.
3In a separate bowl, beat the egg whites until stiff.
4Fold into the batter.
5Add clams.
6Chill the mixture for 2 - 4 hours.
7In a heavy saucepan, pour in enough oil to measure 2 - 3 inches deep.
8Heat to 375°F.
9Add the clams, several at a time, and fry until puffed and golden, about 3 minutes.
10Remove with a slotted spoon and drain well on paper towels.
11Serve with tartar sauce and thick slices of french bread.
