Ingredients:
| 3
| each | Eggs, separated | | 2
| tbsp | Oil | | 1/2
| tsp | Salt | | 1
| quart | Clams, shucked & well draine | | 1
| cup | Milk | | 2
| cup | Flour | | 2
| tbsp | Lemon juice | | 1
| x | Oil for frying |

Procedures:
| 1 | In a large bowl, beat egg yolks until thick. | | 2 | Beat in milk, 2 t. flour, salt, and lemon juice. | | 3 | In a separate bowl, beat the egg whites until stiff. | | 4 | Fold into the batter. | | 5 | Add clams. | | 6 | Chill the mixture for 2 - 4 hours. | | 7 | In a heavy saucepan, pour in enough oil to measure 2 - 3 inches deep. | | 8 | Heat to 375°F. | | 9 | Add the clams, several at a time, and fry until puffed and golden, about 3 minutes. | | 10 | Remove with a slotted spoon and drain well on paper towels. | | 11 | Serve with tartar sauce and thick slices of french bread. | | 12 | New england sampler, jan siegris |
