Ingredients:
4 smallYellow onions Salt & pepper
2 tbspOlive oil
Procedures:
1Preheat oven to 400°F.
2Do not peel the onions.
3Rub the outer skins well with the olive oil.
4Set them in an oiled baking pan, sprinkle with salt & pepper & bake for about 1 hour until soft & golden.
5Serve warm or at room temperature.
6Use either as a side dish or as part of an antipasto.
7Or toss with fresh herbs such as oregano & serve as part of a salad
