Ingredients:
1 Large Egg
3/4 cupWhole Fresh Cilantro Leaves
3/4 cupOlive Oil
1 tbspMinced Garlic
1 tspSalt
7 Turns Fresh Ground Black Pe
2 lbsCooked, unpeeled "New
Potatoes" (halved if small
Quartered if large)
1/3 cupFinely minced onion
Procedures:
1(note: if serving uncooked egg is worrisome, substitute ?cup "simply eggs" for the whole egg) place egg and cilantro in food processor or blender.
2Start processing and slowly stream in ?cup of the oil.
3Add the garlic, ?tesaspoon of the salt and 4 turns of the pepper, stream in the remaining ?cup of the oil.
4Process until thorougly emulsified into a mayonnaise.
5Pour the mayonnaise into large bowl and add potatoes, onion and the remaining ?teaspoon salt and 3 turns pepper.
6Toss to combine thoroughly, cover and refrigerate for up to 24 hours
