Ingredients:
1 cupDried chickpeas
1 tspBaking soda
1 tspSalt
1/2 cupFinely minced onion
2 tbspFinely minced parsley
1 tspGround cumin
1 tspGround coriander
2 Garlic cloves, mashed
Pepper to taste
1 tbspLemon juice
1/8 tspCayenne
Oil for deep frying
Procedures:
1Soak chickpeas over night.
2Drain & put into a blender.
3Add baking soda & salt.
4Blend till you have a texture of fine breadcrumbs.
5Do not blend into a paste.
6Empty into a bowl.
7Add onion, cumin, coriander, garlic, pepper, lemon juice & cayenne.
8Mix gently with a fork.
9Do not pat down.
10Put 2" oil in a wok.
11Form the mixtue into 18 patties.
12Only shape them so that they just hold together.
13Put into hot oil & fry until they are redish brown on both sides.
14Drain on paper towels.
15Serve hot with tahini sauce stuffed in pita.
