Ingredients:
DRESSING
6 tbspRed wine vinegar
1 1/2 tbspDijon mustard
1 1/2 tspSugar
3/4 tspSalt
3/4 tspPepper
3/4 cupOlive oil
SALAD
1 largeHead of red leaf lettuce
- chopped
1 largeHead of romain lettuce
- chopped
1 bunchArugula, chopped
3/4 lbsMushrooms, chopped
3/4 lbsTomatoes, chopped
4 Green onions, chopped
1/4 cupMinced fresh dill
Procedures:
1For dressing: combine vinegar, mustard, sugar, salt and pepper in a small bowl.
2Gradually whisk in oil.
3(can be prepared ahead and stored in refrigerator up to 1 day.
4Allow dressing to come to room temperature before using).
5For salad: place all ingredients in a large bowl and toss with dressing to taste
