Chive croute with tomato and cheese

Ingredients:
2 sliceRound cheese bread
Butter
2 largeRipe tomato slices
2 tbspFresh chives, chopped
2 sliceCheddar, mozzarella or Swiss
-cheese*
Salt and pepper, to taste
Procedures:
1*enough cheese to cover the tomatoes.
2Lightly toast cheese bread (don"t brown).
3Butter bread and top each slice with tomato slice.
4Season with salt and pepper and sprinkle about 1 ts.
5Chives on top of each.
6Top with cheese.
7Place a few inches under a preheated broiler; broil until cheese is melted and bubbling.
8Top croutes with remaining chives and serve at once.
9Enright suggests serving this as a snack or with soup for a light lunch.
