Ingredients:
1 lbsDuck livers, cleaned
1 tbspKosher salt
3 largeShallots, chopped
1 ozBrandy
1 tbspFresh pepper
1 ozHazelnut liqueur
1 tbspNutmeg
3 cupHeavy cream
Procedures:
1Put liver, shallots, pepper, nutmeg, salt, brandy and liqueur in food processor and puree.
2With machine on add 3 cups heavy cream.
3Strain through a fine sieve.
4Bake in water bath at 325 to 350 until the center is firm to the touch.
5Serve as an appetizer or fist course with toasted french bread slices
