Ingredients:
| 1/4
| lbs | Per sandwich | | 1
| large | Bottle hickory flavor BBQ | | | -sauce | | | Salt and pepper to taste | | 1
| | Clove garlic, minced | | 1
| med | Onion, chopped | | 1/4
| cup | Vegetable oil |
|
Procedures:
| 1 | Use 10 to 12" dutch oven, depending on size of batch. | | 2 | Economy cut roasts work best as they seem to have more flavor. | | 3 | Level & heat oven, add oil & brown roast on all sides. | | 4 | Add salt, pepper, & garlic. | | 5 | Cover, add heat to top & simmer. | | 6 | Check & turn roast every 15 min until tender -- usually about 1 hr. | | 7 | Remove bone (if any), excess fat, & cut roast up into bite size pieces. | | 8 | Remove excess grease from oven (??? not sure what he means here) with a spoon, then pour in bbq sauce to thicken the juice that was in the oven. | | 9 | It may take the whole bottle. | | 10 | Place meat back in oven & simmer 30 - 45 min in roast juice & bbq mixture. | | 11 | Spread on bread & enjoy. | | 12 | A variation is to substitute hamburger for the roast to make sloppy joes |
