Ingredients:
1/2 lbsBeef, sliced, marinated
1 lbsAsparagus
1/4 tspBaking soda, dissolved in
2 teaspoons water
1 tbspChinese fermented black
Beans, minced with:
4 Garlic cloves
1 tspRice wine
2 tspSoy sauce
Peanut oil
MARINADE FOR BEEF
1 tspCornstarch
1 tspSoy sauce
1/2 tspRice wine
1/2 tspSugar
1/4 tspMSG (optional)
1/2 tspSalt
GRAVY MIXTURE
1 tspCornstarch
1/3 cupWater
Procedures:
1Cut the beef when it is partially frozen, and cut it across the grain into thin slices.
2Stir baking soda solution into the beef (to help tenderize it).
3Stir in the marinade.
4Then stir in 1 tsp peanut oil and marinate the beef for one hour or more in the refrigerator.
5Heat 1 tablespoon peanut oil over high heat, add ?teaspoon salt.
6Stir in asparagus.
7Add ?cup water.
8Cover pan for 2 minutes, and do not lift lid.
9When done, remove to a platter.
10Over high heat, add 1 tablespoon of oil.
11Stir-fry the rinsed black beans and garlic mixture.
12Stir for a few seconds.
13Add the beef.
14Stir-fry quickly until barely.
15Do not overcook or the beef will become tough.
16Sizzle in 1 tablespoon of rice wine and 2 teaspoons of soy sauce.
17Stir in asparagus.
18Add gravy mixture.
19Stir until thickened.
20Serve hot.
