Alu gosht kari (meat & potato curry)

Ingredients:
1 1/2 kgSkirt steak
(1 ?lb)
1/4 cupOil
1 tspBlack mustard seeds
1/2 tspFenugreek seeds
6 clGarlic, crushed
1 tbspGinger, finely
Chopped
3 medOnions
Finely sliced
1 1/2 tspTurmeric
2 tbspCoriander
1 tbspCumin
2 tspChilli powder
3 tspSalt
2 tbspVinegar
2 tspGaram masala
2 tbspExtra vinegar
750 gramsCubed potatoes (?lb)
2 tbspFresh coriander
Procedures:
1Cut steak into cubes.
2Heat oil and fry mustard seeds till they burst.
3Add fenugreek, garlic, ginger and onion.
4Fry until onions are golden.
5Add turmeric and fry 1 minute.
6Add coriander, cumin and chilli.
7Stir well.
8Add salt and vinegar, and fry until liquid evaporates.
9Sprinkle in the garam masala and mix well.
10Add meat and turn till coated.
11Add extra vinegar if spices start to stick.
12Reduce heat, cover and simmer for 1.5 to 2 hours.
13Add cubed potatoes and cover.
14Cook for a further 20-30 minutes or until potatoes are cooked.
15Garnish with fresh coriander.
