Ingredients:
3 To 4 lbs boneless brisket
2 tbspSchmaltz (rendered chicken
-fat)
3 largeCarrots
1/2 lbsPrunes--pitted
1/2 lbsDried apricots
1 Lemon--thinly sliced
3 largeSweet potatos
Juice of 1 orange
5 cupBoiling water
1 1/2 tbspBrown sugar
2 tbspFlour
Procedures:
1Sear meat well in hot fat in a dutch oven or heavy skillet on top of the stove.
2Transfer to a roasting pan.
3Peel carrots and cut in 1-inch round slices.
4Place them around the meat.
5Add prunes, apricots and lemon slices.
6Peel sweet potatos and cut in 1-inch slices.
7Place over meat and fruit in the roaster.
8Add orange juice to boiling water.
9Combine brown sugar and flour and add enough water to make a thin paste.
10Add this paste to the orange juice mixture.
11Pour over the tzimmes.
12If necessary, add more boiling water to bring liquid to the top of the tzimmes.
13Cover.
14Bake at 400 °F for 1 hour.
15Reduce heat to 325°F.
16And continue baking 4 ?hours.
17Uncover and bake 30 minutes longer
