Ingredients:
2 1/4 cupAM Wheat Bran
2 cupMilk or soy milk
2 Eggs or egg replacer
1/4 cupAM Unrefined Vegetable Oil
1/2 cupHoney (or less to taste)
2 1/2 cupAM Multi Blend Flour
2 1/2 tbspNon-alum baking powder
1 tspSea salt (optional)
1 tspCinnamon
1 1/2 cupRaisins
3/4 cupChopped walnuts or pecans

Procedures:
1In a large mixing bowl combine the bran, milk, eggs, oil and honey.
2In a second bowl, combine all the remaining ingredients.
3Add the dry mixture to the liquid and mix thoroughly.
4Fill oiled muffin tins.
5Bake in 350°F. oven for 30 minutes, or until tops are lightly browned.
6Cool on a rack.
7When thoroughly cooled, store covered in refrigerator or freezer.
8Makes 24 large muffins.
9Oat bran variation: to make aunt hilda"s bran muffins, follow recipe above with these simple changes: a) substitute 2-?cups of oat bran for the wheat bran.
10B) increase the honey to ?cup.
11Everything else is the same.
