Artichoke fritters

Ingredients:
1/2 lbsArtichoke hearts, cooked and
-diced
4 Eggs, separated
1 tspBaking powder
3 Green onions, chopped (green
-parts only)
1 tbspGrated lemon peel
1/2 cupFlour
Salt and pepper to taste
1 tbspCornstarch
4 cupOil for frying, Peanut or
-corn oil
Procedures:
1Place artichoke hearts in a large bowl and stir in egg yolks and baking powder.
2Add green onion.
3Fold in lemon peel.
4Mix in flour, salt and pepper.
5In a separate bowl, beat egg whites and cornstarch together until peaks form.
6Fold egg whites into artichoke mixture.
7Heat oil to 360 degrees.
8With a tablespoon, drop half dollar sized dollops of fritter batter into oil.
9Fry until golden brown, maintaining oil at 360 degrees.
10Remove fritters with a slotted spoon and drain on paper towels.
