Ingredients:

| | Chicken, 2 ?to 3 pounds | | | Juice of 1 ?lemons | | 2
| | Cloves garlic crushed with 1 | | | -tablespoon salt | | 1
| tbsp | Freshly ground black pepper | | 2
| tsp | Ground cayenne or hot ground | | | -pepper | | 1
| tbsp | Paprika | | 2
| tbsp | Butter, melted |

Procedures:
| 1 | Split and butterfly the chicken by cutting down the backbone and opening the chicken, leaving the breast attached. | | 2 | Squeeze the lemon juice over the chicken. | | 3 | Mix the garlic, black and hot peppers, and the paprika together; add to the melted butter. | | 4 | Pour over the chicken. | | 5 | If possible, let the chicken stand overnight, uncovered in the refrigerator. | | 6 | Prepare the grill. | | 7 | Place the chicken, breast side up, on the grill. | | 8 | Cover the grill and cook the chicken for 50 minutes until crisp. | | 9 | Or bake the chicken in a preheated 350°F oven for 50 minutes or until done. | | 10 | If the skin is not crispy, place under the broiler to brown and crisp the skin, watching carefully so that it doesn"t burn. | | 11 | Serves [ new southern cooking; nathalie dupree ] |
