Ingredients:
1 1/2 cupSifted flour
1 tspBaking powder
1 tspBaking soda
1 tspSalt
1 tspCinnamon
1/2 tspNutmeg
2/3 cupPacked brown sugar
1 cupQuick oatmeal
1 cupChopped nuts
2 Eggs
1/4 cupMilk
1/4 cupMelted margarine, cooled
2 Apples, cored, coasely shred
Procedures:
1Preheat oven to 350°F.
2Lightly grease and flour loaf pan.
3Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg in large bowl.
4Stir in brown sugar, oatmeal, and nuts..
5Mix eggs, milk and butter in small bowl, add all at once to oatmeal mixture, add apples, stir lightly with fork until liquid is absorbed into mix and it is completely moistened.
6Spoon into prepared pan.
7Bake for 1 hour and 5 minutes.
8Cool in pan on wire rack 10 minutes.
9Loosen edges with knife, turn out onto rack.
10Cool completely.
11Wrap, store overnight
