Ingredients:
2/3 cupWATER, BOILING
1 cupAPRICOT, DICED
2 cupFLOUR, ALL-PURPOSE
2 1/2 tspBAKING POWDER
1/4 tspBAKING SODA
1/2 tspSALT
1/2 tspALLSPICE
MILK
1/2 cupSHORTENING
3/4 cupSUGAR
EGG, BEATEN
1 cupAPPLE, CHOPPED
3/4 cupWALNUTS, CHOPPED
Procedures:
1Pour boiling water over dried apricots and let stand.
2Sift flour, baking powder, soda, salt and allspice.
3Add milk to apricot juice to make 2/3 c. beat the shortening adding sugar gradually.
4Beat in the egg.
5Add dry ingredients alternately with the liquid.
6Fold in the fruit and walnuts.
7Spoon into a greased and floured pan, 9xBake in 350f oven for 1 hour.
8Cool on rack
