Amaretto coconut bread

Ingredients:
4 ozTofu
1 cupSugar
1/4 cupAmaretto
14 fl ozCoconut milk
2 1/2 cupFlour
1/2 tspSalt
1 tbspBaking powder
1 cupUnsweetened coconut flakes
Procedures:
1Preheat oven to 350°F.
2Grease a 9" x 5" x 3" loaf pan.
3Blend together tofu and sugar thoroughly in an electric mixer or by mashing them together in a large mixing bowl with the utensil of your choice.
4:-) mix amaretto and coconut milk into tofu until well blended.
5Meanwhile, sift together flour, salt and baking powder.
6Toss in coconut flakes, then add dry ingredients to liquid mixture and blend thoroughly.
7Spoon batter into prepared loaf pan.
8Bake until done, about 50 minutes.
9Cool slightly before removing from pan.
10Toasted slices of this bread are very nice with tea, coffee, or your fave hot beverage.
11[note: 1 teaspoon of almond extract and ?cup of water may be substituted for the ?cup of amaretto.
121 ?cups water plus ?cup oil may be used instead of coconut milk.] (c)
