Ingredients:
5 tspBaking soda
2 cupBoiling water
1 cupCanola oil
1 cupSugar or less
6 eachEgg whites
4 cupAll-Bran cereal
2 cupBran flakes
5 cupUnbleached white flour
4 cupNon-fat buttermilk
Procedures:
1Mix baking soda and water.
2Set aside to cool.
3Cream oil and sugar.
4Add egg whites and mix well.
5Combine bran cereals and flours.
6Add to creamed mixture and stir in buttermilk.
7Add water and baking soda and mix.
8Store the batter in a covered container in the refrigerator.
9When ready to bake, preheat oven to 375 degrees and spoon batter into lightly oiled or paper lined muffin tins.
10Return extra batter to refrigerator.
11Bake muffins for 20-25 minutes.
12Makes 60 muffins.
