90-minute soft pretzels

Ingredients:
3 1/2 cupAll-Purpose Flour, unsifted
2 tbspSugar
1 tspSalt
1 packActive Dry Yeast
1 cupWater
1 tbspMargarine
1 tbspWater
1 Egg Yolk, beaten
Coarse salt
Procedures:
1Servings: 12 mix 1 cup flour, sugar, salt and undissolved yeast.
2Heat 1 cup water and margarine to 120 to 130 degrees.
3Gradually add to dry ingredients; beat 2 minutes at medium speed of mixer.
4Add ?cup flour.
5Beat at high speed 2 minutes.
6Stir in enough additional flour to make a soft dough.
7On floured board, knead 5 minutes.
8Set in greased bowl; turn to grease top.
9Cover and let rise in warm, draft-free place 40 minutes.
10Divide dough into 12 equal pieces.
11Roll each into a 20-inch rope.
12Shape into pretzels or other shapes.
13Place on greased baking sheets.
14Cover; let rest 5 minutes.
15Mix egg yolk and 1 tablespoon water; brush on pretzels.
16Sprinkle with coarse salt.
17Bake at 375 degrees 15 minutes or until done.
18Cool on racks
