Braised chicken and sausages w/ tomatoes

Ingredients:
1 3/4 lbsSweet or hot Italian sausage
3 medOnions, thinly sliced
3 medRed or green bell peppers
. cut into strips
3 clGarlic, minced
3 tbspOlive oil
4 lbsChicken breasts, skinless
. boneless, cut into
. quarters
1 cupRed wine
1 canTomatoes, 28oz crushed
1/4 cupParsley, finely chopped
2 tbspBasil, finely chopped
2 tspOregano, finely chopped
1/2 tspSalt
1/2 tspBlack pepper
1 cupRipe olives, sliced
Procedures:
1In 8-quart dutch oven over medium heat, brown sausages on all sides.
2Drain and cool sausages, reserving pan drippings.
3Slice into 1- inch diagonal pieces; place in a large bowl Drain all but 1 tablespoon of drippings from pan.
4To drippings, add onion; cook over medium heat 5 minutes.
5Increase heat slightly.
6Add red pepper: cook 5 minutes.
7Add garlic; cook 1 minute.
8Remove to bowl with sausage.
9Warm oil in same pan over medium-high heat.
10Add chicken in batches so pan is not crowded.
11Cook 5 minutes per batch, or until browned on all sides.
12Add to bowl with sausage.
13Add wine to pan, stirring to scrape up brown bits.
14Add tomatoes, parsley, basil, oregano, salt and black pepper.
15Cover; bring to a boil.
16Stir in chicken and sausage mixture.
17Reduce heat and simmer, covered, for 25 minutes, or until chicken is just cooked.
18Add olives (if desired) during the last few minutes.
19Dinner plan: remove 2/3 of stew to 2 separate microwaveproof containers; cool, then freeze for later use.
20Serve remaining stew.
