Ingredients:
1 tbspOlive oil, or water
1 clGarlic, minced
1 smallOnion, chopped
1 medPotato, sliced
?ea Green bell pepper, diced
1 smallTomato, chopped
1/4 tspOregano
1 lbsSoft tofu, patted dry
1/4 cupFlour, unbleached
1/4 tspTumeric
1 tspNutritional yeast
Salt and pepper to taste
Procedures:
1In a frying pan over med heat, heat the oil or water and saute the garlic, onion, potato, and green pepper until the potato is cooked, about 10 mins.
2In the meantime, blend the reamining ingredients in a blender until smooth.
3Add the tomato and tofu mixture to the pan and cook, covered, over a very low heat until the omelette is set, about 10 mins.
4Serve with salsa
