Polenta grits with cilantro & tomato sauce

Ingredients:
1/2 cupOnion, chopped
1 Garlic clove, minced
1 tspOlive oil
2 cupWater
2/3 cupYellow corn grits
1 medFresh tomato, seeded
-- and coarsely chopped
1/3 cupWater
1/4 cupFresh cilantro, chopped
1 Green onion
1 Garlic clove, minced
1 pinchChili powder
1 pinchGround cumin
1/4 tspSalt
Freshly ground black pepper
Procedures:
1Coat a nonstick saucepan with olive oil.
2Add onion and garlic and saute over medium heat until soft.
3Add water and bring to a boil.
4Stir in grits, cover and cook 5 minutes or until water is absorbed.
5Stir well and spoon into a pie plate.
6Let grits cool until firm enough to slice.
7Prehea oven to 325°F.
8Cut polenta into triangles and place on a lightly greased baking sheet.
9Bake 5 minutes, then turn and bake 5 minutes more until the edges are crisp.
10Top with cilantro & tomato sauce.
11To make cilantro & tomato sauce: combine tomatoes with water in a small saucepan.
12Cook until tomatoes are soft, 5 to 8 minutes.
13Puree tomatoes in a food processor or blender.
14Return pureeded tomatoes to saucepan.
15Stir in cilantro, green onion, garlic, chili powder, cumin, salt and pepper.
16Cook over low heat 5 minutes or until thickened.
