Ingredients:
2 cupWholewheat flour
1 tspCinnamon
1/2 tspGinger
1/4 tspNutmeg
1/2 tspSalt
2 tspBaking powder
1/2 cupPureed pumpkin
1/4 cupFirm silken tofu
2 tbspMaple syrup
4 tbspSoy milk
Procedures:
1Preheat oven to 425°F.
2Mix together the first 6 ingredients & set aside.
3Blend together the pumpkin, tofu & maple syrup until smooth.
4Add to dry ingredients.
5Stir in soy milk, 1 tb at a time, until the dough forms a ball.
6Roll out dough to ? thickness.
7Cut with a cookie cutter.
8Bake for 10 minutes, or until golden.
9Serve immediately
