Ingredients:
MARINADE
3/4 cupOlive oil
1/4 cupRed wine vinegar
1 tspFresh rosemary, chopped --
OR
1/2 tspDried rosemary
1 tspFresh thyme leaves -- OR
1/2 tspDried thyme
1 tspFresh basil, chopped -- OR
1/2 tspDried basil
1 tspFresh oregano, chopped --
OR
1/2 tspDried oregano
1 tbspGarlic -- minced
1/2 tspSalt
1/2 tspGround black pepper
VEGETABLES
2 lbsAssorted vegetables
Left whole if small or cut
In half
Procedures:
1Marinade - whisk together all ingredients in a small bowl.
2Arrange the vegetables in shallow dish or plastic container, pour the marinade over them, cover and refrigerate for 2 hrs.
3Prepare a grill.
4Remove the vegetables from the marinade (reserve marinade).
5Grill the vegetables 6" away from the heat source until they are tender, brushing them with the marinade as they cook.
6Cooking times will vary according to the vegetables.
