| each | STIFFLY BEATEN EGG WHITES |

Procedures:
| 1 | Beat egg yolks 4 to 5 minutes or until thick and lemon colored. | | 2 | Add sugar, flour, milk, butter and salt. | | 3 | Beat 2 to 3 minutes. | | 4 | Gently fold in beaten egg whites. | | 5 | Spoon batter into 12 well greased muffin pans. | | 6 | Fill to 2/3 full. | | 7 | Bake at 375 deg f. for 30 minutes. | | 8 | Serve with butter and jam or jelly if desired |
