Irish oatmeal with dried fruit and honey

Ingredients:
2 cupApple cider or juice
1 Cinnamon stick
1/4 tspSalt
1 cupIrish oatmeal
5 ozDried peach, apricot, and
-pear halves in any
-combination, cut into 3/8
-inch dice (about 1 C)
Honey or dark-brown sugar
1/2 cupLow-fat milk, warmed
Procedures:
1In a heavy saucepan, bring 2 c water, the apple cider, cinnamon stick, and salt to a boil.
2Add oatmeal, stir until smooth, and return to a boil.
3Lower heat and simmer, stirring occasionally, for about 30 minutes.
4Remove saucepan from heat.
5Discard the cinnamon stick and stir in all but about ?c of the dried fruit.
6Divide oatmeal among 4 bowls and top with honey, if desired.
7Garnish with remaining fruit; serve with warm milk.
