Orange muffins with smoked turkey

Ingredients:

1 cupSugar
1/2 cupUnsalted butter
2 Eggs
1 tspBaking soda
1 cupButtermilk
2 cupFlour, sifted, all-purpose
1/2 tspSalt
1 cupRaisins
Zest & juice of one orange
1/2 cupSugar
1/2 lbsSmoked turkey breast
-thinly sliced
3/4 cupQuince jelly
Procedures:
1Preheat oven to 400 degrees.
2Butter mini-muffin tins.
3Cream 1 cup sugar and butter until smooth.
4Add eggs and beat until fluffy.
5Add baking soda to buttermilk.
6Sift flour and salt together and add to sugar-butter mixture alternately with buttermilk.
7Stir until well mixed.
8In food processor, grind raisins and orange zest.
9Add to batter and mix.
10Spoon batter into buttered muffin tins and bake until golden brown and firm to touch, about 12 minutes.
11Remove tins to rack and set close together.
12Brush tops of muffins with orange juice and sprinkle with remaining ?c sugar while still warm.
13After five minutes, turn out from pans.
14Cool completely before cutting each muffin in half.
15Cut turkey into small pieces and put a small amount on each muffin bottom.
16Top turkey with ?tsp quince jelly, cover with muffin top, and serve
