Ingredients:
1 1/4 cupAll-purpose flour
2 tspBaking powder
1/4 tspSalt
1/4 tspApple pie spice
1/8 tspBaking soda
1 Egg
3/4 cupApple juice
2 tbspHoney
1 tbspCooking oil
Procedures:
1In a medium mixing bowl, stir flour, baking powder, salt, apple pie spice, and baking soda.
2In a small mixing bowl, beat egg slightly; stir in apple juice, honey, and oil.
3Add egg mixture all at once to flour mixture; stir until blended but still slightly lumpy.
4For each pancake: onto a hot, lightly greased griddle or skillet, pour about ?cup batter.
5Cook 2 to 3 minutes or until pancakes have a bubbly surface and slightly dry edges.
6Turn and cook 2 to 3 minutes more or until golden brown.
7Makes 8, 4-inch pancakes
