Ingredients:
1 cupWhole-wheat flour
1/4 cupSugar
1/4 tspBaking soda
3 tbspCoarsely chopped ginger
-crystallized
1/4 cupNonfat milk
1/4 cupMolasses
2 largeEgg whites
Procedures:
1In a large bowl, stir together flour, sugar, soda, and crystallized ginger.
2Add milk, molasses, and egg whites; beat until smoothly blended.
3Spread batter evenly in a nonstick (or lightly oiled regular) 8" square pan.
4Bake in a 350°F.
5Oven until cake begins to pull from pan sides and springs back when lightly toughed in center, 20-25 minutes.
6Serve warm or cool, cut into about 2" squares.
7Store as directed, preceding.
