Lemon pepper pasta with piccatta style vegeta

Ingredients:
12 ozFettuccine -- or
Penne rigate, lemon pepper
Flavored
1 tbspExtra virgin olive oil
2 tbspButter
1 cupRed onions -- julienned
1 cupSnow pea -- julienned
2 tspGarlic -- minced
1 cupWhite wine
1 1/2 tbspCapers
2 tbspChopped parsley
1/3 cupParmesan cheese -- grated
Salt and pepper -- to taste
Procedures:
1Cook pasta according to package directions.
2Drain al dente pasta, keep hot.
3Meanwhile, in large skillet, heat olive oil and butter.
4Add onions, carrots, and garlic and saute for 4 minutes.
5Next add in wine and capers and simmer for 2 minutes.
6Mix in drained and hot lemon pepper pasta and snow peas and toss and blend well.
7Salt and pepper and sprinkle with parsley.
8Top with parmesan and serve.
9Makes 3 dinner or 6 appetizer portions.
