Lemon pasta salad with peppercorn-coconut glaze

Ingredients:
14 ozUdon noodles
2 tbspExtra-virgin olive oil
1/4 cupLemon juice
2 tbspLemon zest
1 tspCoarsely ground black pepper
1/2 cupVegetable stock
1/2 cupCoconut, grated
2 cupSlivered snow peas
1 tspSalt
1/4 cupCilantro, chopped
1/4 cupBasil, chopped
Procedures:
1Cook udon noodles in salted water according to package instructions, till tender but firm.
2Drain.
3Heat 1 tb oil in skillet, add lemon juice, zest, pepper, stock & coconut.
4Bring to a boil.
5Cover & cook over moderate heat for 2 minutes.
6Add snow peas & continue to cook for 1 minute.
7Remove pan from heat, add drained noodles & stir to blend.
8Season with salt.
9When cooled, add herbs & mix.
10Drizzle with remaining oil & garnish with cilantro
