| oz | Firm silken tofu | | 1/3
| cup | Apple juice | | 1
| tbsp | Lemon juice | | 1
| cup | Wholewheat flour | | 1
| cup | All-purpose flour | | 2
| tsp | Baking powder | | 1/2
| tsp | Baking soda | | 1/4
| tsp | Salt, optional | | 2
| tbsp | Basil, chopped -=OR=- | | 1
| tbsp | Basil, dried | | 2
| tbsp | Chives, chopped -=OR=- | | 1
| tbsp | Chives, dried |

Procedures:
| 1 | Preheat oven to 450f & oil cookie sheets. | | 2 | Blend tofu till smooth. | | 3 | Blend in apple juice & lemon juice. | | 4 | Transfer to a medium sized mixing bowl & set aside. | | 5 | Sift together the next 5 ingredients & fold into the tofu mixture. | | 6 | Stir in basil & chives. | | 7 | Turn dough out onto a lightly floured board & form into a ball. | | 8 | Roll dough out to ? thickness & cut with a cookie cutter. | | 9 | Bake for 12 minutes & serve immediately |
