Ingredients:
1/2 lbsBulk sausage
1/4 cupChopped onions
1/2 cupMilk
3 Eggs
1/2 cupMayonnaise
2 cupShredded cheddar cheese
Crepe batter ingredients:
4 Eggs
1/4 tspSalt
2 cupFlour
2 1/4 cupMilk
1/4 cupMelted butter
Procedures:
1Recipe by: inn recipes in a skillet, brown sausage with onion and drain.
2In large bowl, combine remaining ingredients with sausage.
3Line greased muffin tin with crepes.
4Fill ?full with sausage mixture and bake at 350 °F for 15 minutes.
5Cover loosely with foil and bake 15 additional minutes or until set.
6Fills 12-14 crepes.
7Crepe batter ingredients: combine all ingredients in blender, and blend for one minute.
8Scrape down sides and blend another 15 seconds or until smooth.
9Refrigerate batter 1 hour or longer.
10Cook crepe until bottom is browned.
11Then carefully turn with spatula.
12Brown other side for a few seconds.
13Remove from pan with spatula; stack on plate or tray.
14Freeze in muffin tins, then remove and store in plastic bags.
