Ingredients:
| 3/4
| cup | California dried figs | | 2
| cup | Sifted cake flour | | 2
| tbsp | Double-acting baking powder | | 1/2
| tsp | Salt | | 2
| tbsp | Sugar | | 1
| tsp | Grated lemon rind | | 3
| | Egg yolks | | 1 1/2
| cup | Milk | | 7
| tbsp | Butter or shortening, melted | | 3
| | Egg whites, stiffly beaten |

Procedures:
| 1 | Allow figs to stand in boiling water for 10 minutes, then clip off stems and blossom ends with scissors, and snip into small pieces. | | 2 | Reserve some for use in syrup. | | 3 | Sift flour, measure, then re-sift into mixing bowl with remaining dry ingredients. | | 4 | Add lemon rind and finely cut figs. | | 5 | Combine well-beaten egg yolks with milk and melted shortening. | | 6 | Mix lightly into dry ingredients, then fold in stiffly beaten egg whites. | | 7 | Bake on hot waffle iron until golden brown. | | 8 | Serve with lots of butter and warm maple syrup to which cut figs have been added. |
