Eggs baked in peppers - washington time

Ingredients:
2 largeRound red peppers
8 Eggs
Salt and pepper
2 tbspUnsalted butter
1 cupTomato sauce
Procedures:
1Select well-shaped peppers that will sit upright.
2Halve them crosswise and remove seeds.
3Trim stems but do not make a hole.
4Parboil peppers in simmering, salted water until just tender, then drain peppers.
5Break eggs 2 eggs into each pepper half.
6Season and top with a ?tablespoon slice of butter.
7Place peppers in small baking pan, pour in 1 inch of hot poaching water, and bake briefly at 375 degrees until eggs set.
