Leek and zucchini pasta

Ingredients:
2 ea Leeks, medium
2 tbspVegetable oil
1 1/2 cupMushrooms, sliced
1 ea Tomato, large, diced
1 ea Zucchini, medium, julienned
1/4 cupWine, white, dry
1 cupSour cream
1 tspTarragon leaves
1/2 tspSalt
3 cupRotini pasta
Procedures:
1Discard green part of leeks and slice thinly lengthwise.
2In large fry pan, heat oil over medium-high heat.
3Saute leeks,mushrooms,tomato and zucchini 5 minutes.
4Add wine and simmer 5 minutes longer.
5Stir in cream,tarragon and salt.
6Bring to a boil and simmer until slightly thickened.
7While preparing sauce, cook pasta according to package directions.
8Drain well.
9Spoon onto plates and top with sauce.
10Excellent served with chicken brochettes
