Creamy scrambled tofu

Ingredients:
1/4 cupVegetable stock
2 ea Potatoes, peeled & diced
1 ea Green bell pepper, diced
2 ea Green onions, chopped
10 1/4 ozFirm silken tofu, crumbled
3 tbspMellow white miso
2 tbspWater
1/4 tspTurmeric
Parsley, for garnish
Procedures:
1Bring the vegetable stock to a boil in a large skillet.
2Add the potatoes, pepper & green onions.
3Reduce heat & simmer until the potato is tender.
4Add tofu & cook until heated through.
5Remove from heat & set aside.
6Stir together the remaining ingredients in a bowl.
7Stir into the waiting potato mixture & serve imemdiately garnished with the parsley.
