Ingredients:

| cup | Ketchup or tomato sauce | | 3
| tbsp | White vinegar | | 2
| tbsp | Lemon juice | | 1/4
| cup | Worcestershire sauce | | 1/2
| cup | Maple syrup | | 9
| | Juniper berries | | 2
| med | Onions, diced | | 1/2
| tsp | Salt | | 6
| lbs | Caribou ribs | | | Fresh ground black pepper |

Procedures:
| 1 | In large non-metal bowl, combine all the ingredients except the ribs andpepper. | | 2 | Blend well and put in the ribs to marinade overnight.preheat the oven to 32Remove the ribs from the marinade, drain and pat drywith paper towels. | | 3 | Sprinkle ribs with pepper. | | 4 | Place in 5 qt. roasting pan in adouble layer. | | 5 | Roast 1 hour. | | 6 | Pour sauce over ribs. | | 7 | Increase heat to 350 degreesand bake until ribs just begin to char on top, about 1 ?hours. | | 8 | Turn ribsover cover pan and bake about 30 minutes longer, until ribs are tender andsauce is thick. | | 9 | To serve, place ribs on serving platter. | | 10 | Serve the sauce in agravy boat on the side |
