Cheesy popovers

Ingredients:
2 Egg
1 cupMilk
3/4 tbspSalt
1/2 tbspThyme
1/4 tbspSage
1/2 tbspBasil
1 cupUnbleached flour
1/2 cupCheddar cheese
Procedures:
1Combine seasonings with milk and eggs; add flour and cheese; mix until just blended.
2Pour into well-oiled muffin tins, filling 2/3 full.
3Do not preheat oven.
4Place muffin tin in oven, and heat to 450 degrees.
5Bake 30 minutes, no peeking.
6Remove from oven; turn off heat.
7Pierce popovers on 4 sides at right angles.
8Return to oven (do not turn on heat).
9Allow popovers to dry in oven about 10 minutes.
10Serve immediately
