Ingredients:
2 cupElbow macaroni -- cooked
1/2 tspOil
1/2 tspCumin
1/2 tspSalt
15 ozDark red kidney beans --
Drained and washed
2 cupFrozen corn -- thawed
1/2 cupBell peppers -- chopped
1/2 cupOnions -- chopped
3/4 cupFat-free mayonnaise
1/2 cupFat-free sour cream
1/2 cupTaco sauce
Procedures:
1Prepare elbow macaroni according to package directions.
2Drain and rinse under cold water; drain again.
3Toss with oil, cumin, and salt.
4Layer macaroni, beans, corn, bell peppers, and onions.
5Place in a 9 x 13" pan.
6In a mixing bowl, combine mayonnaise, sour cream, and taco sauce.
7Spread mixture evenly over top of pasta, sealing to edge of bowl.
8Cover tightly and chill overnight
