Butterfly orange muffins

Ingredients:
2 cupFlour, self-rising
2 tbspSugar
1 Egg, beaten
1 cupMilk
3 tbspShortening, melted (or oil)
1 tbspOrange rind, grated
24 Mandarin orange sections

Procedures:
1Combine flour and sugar in a large mixing bowl.
2Blend together egg, milk, shortening, and orange rind.
3Add liquid all at once to flour mixture, stirring only until flour is moistened.
4Fill greased muffin pans 2/3 full.
5Place 2 orange sections on each muffin in opposite directions to form a butterfly.
6Bake at 425 °F for 20 to 25 minutes or until golden brown.
