Ingredients:
1 tbspOliveoil
1/2 Onion, chopped finely
1 cupFrozen Broccoli, chopped
1 tbspMinced Basil or Dill
1 cupEggsubstitute or
8 Eggwhites
1/2 cupLow-fat Cottage Cheese
Procedures:
1In a large frying pan, with heatproof handle, heat the oil over medium heat.
2Saute the onions in the oil for 5 minutes, or until soft.
3Add the brocoli and herbs, saute for a few minutes.
4In a small bowl, whisk together the eggs and cottage cheese.
5Pour over broccoli in pan.
6Stir a few times to blend.
7Cook for 3-5 minutes.
8Transfer to the oven and bake at 375°F until the eggs are set, about 15 minutes
