Ingredients:
1 cupWarm water
3 1/2 cupWheat/oat bran cereal
2 1/2 cupUnbleached all-purpose flour
2 1/2 tspBaking soda
1/2 cupButter/margarine, room temp.
1 1/2 cupGranulated sugar
2 eachLarge eggs
2 cupButter/sour milk.
Procedures:
1Mix water with 1 cup cereal.
2Sift flour with baking soda.
3In a large bowl, beat butter until creamy.
4Add sugar ?cup at a time, beating after each addition.
5Blend in eggs, one at a time, beating well after each addition.
6Scrape sides of bowl often.
7Stir in flour mixture ?cup at a time, alternating with butter/sour milk, added ?cup at a time also.
8Stir in soaked bran and the remaining bran cereal.
9Cover and store in refrigerator at least 6 hours before baking.
10To bake muffins, heat oven to 400 °F.
11Grease 2 ?inch muffin cups.
12Stir batter gently.
13Fill each muffin cup with about ?c batter.
14Bake about 20 minutes, or until nicely browned.
15Remove from pan and serve hot with butter.
16Makes 6 cups batter or about 24 2 ?inch muffins
