Blueberry french toast sandwiches

Ingredients:
2 cupBlueberries, frozen
3/4 cupMaple syrup
1 tspOrange peel, grated
1 tbspCornstarch
2 tbspWater
3 Eggs, beaten
3/4 cupMilk
1 tspVanilla
1/4 tspNutmeg
8 sliceBread
3 tbspMargarine
Sugar, powdered
Procedures:
1Combine blueberries, maple syrup and orange peel in a small saucepan.
2Dissolve cornstarch in water; add to blueberry mixture.
3Cook and stir until mixture boils; reduce heat and simmer 1 minute or until mixture thickens.
4Combine eggs, milk, vanilla and nutmeg; mix well.
5Dip each slice of bread into egg mixture.
6Cook each slice in small amount of butter in skillet or on griddle about 2 minutes or until golden brown on each side.
7Place one slice on each individual plate, spread with 3 tablespoons blueberry mixture, top with second slice and 1 tablespoon blueberry mixture.
8Sprinkle lightly with powdered sugar
