Ingredients:
BANANA BREAD
2 cupAll-Purpose Flour, sifted
1 tspBaking Soda
1/2 tspSalt
1/2 cupUnsalted Butter, at room
-temperature
1 cupSugar
2 Eggs
1 cupRipe Bananas, mashed
1 tspFresh Lemon Juice
1/3 cupMilk
1/2 cupPecans, chopped
FRENCH TOAST
4 largeEggs
1/4 cupWhipping Cream
2 tbspBrown Sugar
1 tspVanilla Extract
1/4 tspGround Nutmeg
1/4 tspGround Cinnamon
3 tbspButter
Maple Syrup
Procedures:
1Preheat oven to 350°F.
2Generously butter a 9 x 5 x 3" loaf pan.
3Sift first 3 ingredients into a small bowl.
4Using an electric mixer, cream butter in a large bowl until light.
5Gradually beat in sugar.
6Beat in eggs one at a time.
7Add mashed bananas and lemon juice and beat until well blended.
8Mix in dry ingredients alternately with milk, beginning and ending with dry ingredients.
9Mix in pecans.
10Pour batter into prepared pan.
11Bake until toothpick inserted in center comes out clean, about 1 hour 20 minutes.
12Cool in pan on rack for 10 minutes.
13Turn out onto rack and cool completely.
14(can be prepared 2 days ahead.
15Wrap tightly and refrigerate).
16Cut bread into ? thick slices.
17Preheat oven to low.
18Whisk eggs, cream, sugar, vanilla, and spices in a large bowl until blended.
19Melt 1 tb butter in a heavy large skillet over medium heat.
20Place some bread in the batter and turn to coat thoroughly.
21Add bread to skillet.
22Cook until golden brown, about 3 minutes per side.
23Transfer french toast to a cookie sheet, place in oven to keep warm.
24Repeat with remaining bread slices and batter in batches, adding more butter to skillet as necessary.
25Serve french toast with maple syrup.
